THIS IS NOT YOUR AUNT’S GREEN BEAN CASSEROLE! WHILE FAMILIAR, THIS NEW TWIST ON A CLASSIC DISH, USING FRESH INGREDIENTS, IS SURE TO WOW THE FAMILY AND HELP MAKE YOU AND YOUR “CASSEROLE” THE STAR OF THE DAY. MOVE OVER AUNT DIANE… THERES A NEW SHERIFF IN TOWN!

YIELD: SERVES 6

 TIME: 35 MINUTES

INGREDIENTS

  • 1 LB OF FRENCH GREEN BEANS (HARICOT VERTS)
  • 1/2 LB OF CREMINI MUSHROOMS (ROUGH SLICED)
  • 4 OZ OF UNSALTED BUTTER
  • 1/4 CUP OF OLIVE OIL
  • FRATELLI & CO. PICATTA SAUCE
  • SMALL BAG OF FRIED ONION STRAWS 

DIRECTIONS

  1. TRIM ANY BAD ENDS OF THE BEANS AND BLANCH THEM TO BRIGHTEN UP THEIR COLOR AND LOOSEN THEIR FIBERS

  2. TO BLANCH THE BEANS SUBMERGE THEM IN A POT OF BOILING WATER FOR ABOUT 8 MINUTES. DRAIN THEM AND PUT THEM IN A BOWL OF ICE WATER TO STOP THE COOKING PROCESS AND KEEP THAT BEAUTIFUL GREEN COLOR, SET ASIDE.

  3. SAUTEE THE MUSHROOMS IN THE OLIVE OIL OVER MEDIUM HIGH HEAT FOR ABOUT 10 MINUTES STIRRING OCCASIONALLY. ADD THE BUTTER AND CONTINUING TO SAUTÉ AND COOK THE MUSHROOMS DOWN FOR ANOTHER 5 MINUTES.

  4. DRAIN THE BEANS AND ADD THEM TO THE POT/PAN WITH THE MUSHROOMS. WITH THE HEAT ON MEDIUM HIGH STILL ADD IN HALF A BOTTLE OF THAT BEAUTIFUL FRATELLI & CO PICCATA SAUCE. COOK ALL THIS TOGETHER FOR ABOUT 3-5 MINUTES STIRRING OCCASIONALLY. REMOVE FROM THE HEAT. STIR ON ABOUT 1/2 CUP OF ONION STRAWS; MAKE SURE TO LEAVE SOME FOR TOPPING.

  5. PUT ALL OF THIS INTO YOUR FAVORITE OVEN SAFE CONTAINER AND TOP WITH THE REMAINING ONION STRAWS=

  6. COVER AND YOU CAN NOW CHILL THIS UNTIL YOU’RE GETTING READY TO SERVE IT.

  7. TO SERVE- JUST HEAT IN THE OVEN COVERED AT 350 FOR 15-20 MINUTES AND TAKE THE FOIL OFF FOR THE LAST FEW MINUTES TO BROWN THE ONION STRAWS ON TOP!

NOW SIT BACK AND BASK IN THE AWE OF BEING THE BEST COOK AT THANKSGIVING!
