EATING HEALTHIER DOESN'T MEAN YOU HAVE TO EAT BLAND TASTING FOOD.  IT JUST MEANS YOU HAVE TO BE SMARTER AND MORE THOUGHTFUL ABOUT WHAT INGREDIENTS YOU USE IN YOUR MEALS.  THE RECIPE BELOW IS A PERFECT EXAMPLE OF A DELICIOUS MEAL THAT USES HEALTHY INGREDIENTS WHILE LEAVING YOU FEELING FULL AND SATISFIED

YIELD: SERVES 3-4 PEOPLE

TIME: 1 HOUR

INGREDIENTS

  • CHICKEN BREAST (4 SMALL OR 8 - 10 TENDERLOINS)
  • PARSLEY
  • 2 SPRIGS OF THYME
  • 2 SPRIGS OF OREGANO
  • OLIVE OIL
  • 1 HEAD OF CAULIFLOWER (RICED)
  • 1 CLOVE OF GARLIC (CHOPPED)
  • 1 - 2 ZUCCHINIS (QUARTERED AND DICED)
  • 1 - 2 OZ. OF BUTTER
  • SALT AND PEPPER
  • WHITE WINE
  • 1/8 CUP OF CHICKEN BROTH
  • 1/2 JAR OF FRATELLI AND COMPANY ALLA VODKA SAUCE

 DIRECTIONS

  1. TAKE ALL THE LEAVES OFF THE SPRIGS FOR THE HERBS, CHOP FINELY AND TOSS IN A BOWL.
  2. MIX HERBS WELL WITH 2 - 4 TBSP. OF OLIVE OIL AND A PINCH OF SALT AND PEPPER.
  3. IN A SEPARATE BOWL, ADD THE CHICKEN AND TOP WITH THE OLIVE OIL MIXTURE. REMEMBER: SAVE SOME OF THE MIXTURE TO BRUSH ON THE CHICKEN WHILE IT IS ON THE GRILL.
  4. LET CHICKEN SIT FOR 15 - 20 MINUTES.
  5. GRILL THE CHICKEN WHILE REGULARLY BRUSHING THE OLIVE OIL MIXTURE ONTO THE CHICKEN WHILE IT IS ON AND BEING PULLED OFF THE GRILL.
  6. IN A SMALL POT OR PAN, HEAT UP THE FRATELLI ALLA VODKA SAUCE ON LOW AND SET ASIDE.
  7. PREPARE THE CAULIFLOWER RICE IN A MEDIUM/LARGE SKILLET.
  8. ADD OLIVE OIL TO THE HOT PAN AND ADD THE RICE, ZUCCHINI AND GARLIC SAUTE FOR A FEW MINUTES.
  9. ADD A SPLASH OF WHITE WINE AND THE CHICKEN BROTH.
  10. LET REDUCE AND FINISH WITH BUTTER, SALT AND PEPPER.
  11. PLATE THE CAULIFLOWER AND ZUCCHINI MIXTURE ON PLATES.
  12. TOP THE RICE AND ZUCCHINI WITH THE CHICKEN AND THEN THE ALLA VODKA SAUCE ON TOP.
  13. GARNISH WITH PARSLEY AND PARMESAN CHEESE.
  14. EAT A DELICIOUS AND HEALTHY MEAL USING FRATELLI AND COMPANY'S ALLA VODKA SAUCE!
